SWEET POTATO AND KALE EGGS

Method:
* Dice sweet potato, zucchini and mushrooms into small pieces ( the smaller the pieces the quicker it will cook).  Roughly chop the kale into bite size pieces.
* Saute sweet potato in coconut oil, paprika, turmeric, garlic powder and salt.
* After a few minutes add zucchini and mushrooms and cook for another 1-2 minutes.
* Add kale to pan and mix through.
* Crack two eggs into the pan on top of the vegetables and add a lid ( you can also put the pan under the grill). 
* Cook until eggs are cooked to your preference.
* Slide onto plate and add toppings: pictured is avocado, red sauerkraut and black sesame seeds.
